Smiling Buddha Berry Bowl

berry_cashew_smoothie_bowlI’m a little late getting on board the smoothie bowl train. Thank goodness I finally made the leap! SIAB- that’s smoothies in a bowl for short, have been all over Instagram for a while now. Beautiful artistic pics of berries, nuts, and bee pollen whimsically arranged on top of a smoothie in a bowl. I thought it was trendy and kind of silly until I made one the other day.

I must admit that they are really fun to create. Plus sitting down to a pretty bowl of goodness instead of slurping it through a straw as you rush out the door is a more civilized way to start the day.

I dare you to give it a try! Just make the smoothie thicker than usual, pour it in a bowl, and garnish it with your favorite healthy toppings. Keep an eye on the sugar and don’t forget your spoon!

Smiling Buddha Berry Bowl
(gluten-free)

  • 1/3 cup raw organic cashews
  • 2 teaspoons goji berries
  • 1 Tablespoon chia seeds
  • 1/2 frozen banana
  • 1/2 cup EACH frozen organic raspberries and blueberries
  • 1 cup unsweetened coconut milk
  • Top with sliced kiwi, fresh blueberries, crushed cashews and coconut flakes

Place all ingredients in a high speed blender in order listed and blend until creamy, 45-60 seconds. Whimsically arrange toppings. Sit down and enjoy.

Serves 1 generously
